Cinnamon Raisin Roll Banana Muffin by @eina_1801 (Flourless, Gluten-Free)

While many store bought muffins are not only loaded with unnecessary calories (up to 400 kcal/muffin) and refined sugars, they contain almost minimal-to-no nutritional value as they are typically made with mostly flour, sugars, artificial flavourings and additives (so they become shelf-stable).

Directions

  1. Blend gourmet oatmeal until becomes fine (flour-like texture)
  2. Combine all ingredients and mix well.
  3. Pour batter into muffin cups and add your favourite toppings (Eina sprinkled hers with dried cranberries, sunflower and pumpkin seeds)
  4. Bake for 10 minutes in air fryer (or oven) at 180'C and you're ready to enjoy!
