Almond Latte-Blueberry Baked Oatmeal by @mira.sofia.saufi (Flourless, Gluten-Free)

Baked oatmeal is a traditional and comforting Amish breakfast food. Unlike regular oatmeal, this baked oatmeal using our Almond Latte Flourless Pancake Mix contains over 3 variety of real whole foods and superfoods (such as organic oats, organic ground flaxseeds, ground almonds)  - "almost complete all the ingredients in 1 pack needed to make this delicious and healthy recipe" - Mira

Let's get started and follow along with Mira to make her super quick and easy recipe! 😍

 

 

Ingredients :-

Dry ingredients :-

Wet ingredients :-

  • 1C fresh milk (or milk of your choice)
  • 1 egg
  • 1 tsp vanilla essense (optional)
  • 1/4C of honey

Base/Filling :-

  • 2-3 bananas (coined thickly)
  • 1/2C blueberries 
  • 1/4C chopped walnuts
  • 1/2C dark chocolates

 

Directions :-

  1. Prepare 8x8'-inch square baking dish or any oven-proof dish (oiled so that it is easy to remove the baked oatmeal later). Place the base/filling in the dish and bake in pre-heated oven at 170'C for 15 minutes
  2. After baked 15minutes, remove from oven and add pre-combined dry ingredients and spread on top of base/filling evenly
  3. Add pre-combined wet ingredients 
  4. Add more additional base/filling as toppings 
  5. Bake again for 25-30minutes until you get a golden brown crusty top. Remove from oven, leave to cool and enjoy as it is or with yoghurt, ice-cream or just milk. Yummsss!

 

Mira's additional pro-tip :-

  • Its perfect to enjoy cold or warm. You can keep the access in the refrigerator and reheat to enjoy the next day for breakfast or afternoon tea 😋 

 

GO BASIX nutritional tip :-

  • For dairy-free option, you can swap out fresh milk with plant-based milk like almond milk, nut milk, oat milk or coconut milk
  • For vegan option : use dairy-free milk + swap out egg with "flax egg" (pancake mix already contain grounded flaxseed, so just add 2 Tbs water in the wet-ingredients)
