What could be cosier than breakfast-in-bed? Now you can make these in minutes with minimal simple, real whole food ingredients to treat yourself or your loved ones anytime more often.

1. Strawberry (or Blueberry) Lemon Ricotta Flourless Pancakes 

Recipe makes 3 medium-size pancakes

Ingredients 

Directions

  1. Add milk, lemon, and ricotta to flourless pancake mix.
  2. Mix well all the ingredients until you get a thick-creamy consistency (Tip : if it is too thin, add a little more pancake mix.  If it is too thick, add a little more milk)
  3. Heat on an oiled pan (butter or oil) on medium-low heat for 1-2 minutes then add berries onto pancake, and flip to heat on the other side for 1 minute (Tip : wait until the bubbles stop popping and reforming on the raw side of the dough before flipping.)
  4. Serve with some more blueberries/strawberries/ yoghurt and drizzle with maple syrup or honey. Enjoy!

 Smarter Pro-tip :-

  • You can also make more in advance - freeze the leftover pancakes o a large baking sheet, placed in a zip lock bag. They are super tasty reheated in a toaster.
  • For a Vegan / Dairy-Free version :-
    • replace milk with Almond Milk
    • replace ricotta cheese with nutritional yeast + coconut cream

2. Almond Latte Flourless Crepe with Bananas

Recipe by the amazing @eina_1801 ❤️

Ingredients 

Directions

  1. Add milk to pancake mix, stir well until you form a thin-creamy consistency 
  2. Heat on oil pan on medium-low heat for 1-2 minutes then flip to heat on the other side for 1 minute (Tip : wait until the bubbles stop popping and reforming on the raw side of the dough before flipping.)
  3. Remove onto a plate and spread some nut butter and 1/2 banana (sliced).
  4. Roll the crepe and drizzle with chocolate melt (or maply syrup/honey) and sprinkle with some chopped nuts and seeds. Enjoy!

Direction

  • Pre-heat oven to 170'C
  • Mix well all ingredients and pour into a round baking dish

4. Gourmet Oatmeal-Chia Pudding-Fruit Smoothies Parfait

Recipe makes 2 parfaits

Ingredients 

Chia pudding layer

  • 2 tablespoons chia seeds
  • 1/2C almond milk or milk of your choice

 Gourmet oatmeal layer

Fruit Smoothie Layer

  • 1 frozen banana
  • 1/2C frozen berries (blueberries, wild berries)
  • 1/4C almond milk

Directions

  1. Combine chia pudding ingredients in a cup, stir well and let it set in the fridge for 15 minutes
  2. In a separate bowl, prepare gourmet oatmeal : add hot water, cover 3 minutes and stir well. Set aside to cool while preparing the smoothie.
  3. Blend all the smoothie ingredients in a blender
  4. Layering : 
    • Prepare 2 nice clear glass cups
    • Place refrigerated chia pudding at the bottom layer in each cup
    • Top with gourmet oatmeal in each cup
    • Top the final layer with the blended fruit smoothie
    • Enjoy with sprinkle of cacao nibs / coconut flakes & chopped mint leaves

Directions :-

  1. Add hot water to gourmet oatmeal, cover 3 minutes and then stir well and set aside while you prepare the caramalised banana
  2. Heat bananas with some butter and maple syrup/honey (optional) for a few minutes on each side or until golden brown
